    A Nutrient Rich Recipe: Nori Wraps with Tofu and Mango

    Nori could be your next kitchen counter essential! Beyond holding sushi together, it is a unique source of prebiotic fibers that are only found in sea vegetables. These fibers can help balance estrogen levels, which in turn may reduce the risk of breast cancer. Nori is also rich in essential vitamins and minerals, and relatively budget-friendly.

    Nori Wraps with Tofu and Mango

    Ingredients:

    • 8 nori sheets
    • half a cup of sushi rice
    • 1,5 tbs of rice vinegar
    • half a tsp sugar
    • ¼ tsp salt
    • 1 block of firm tofu (300-400g)
    • 2 tbs preferred cooking oil
    • 1 cucumber
    • 1 mango
    • 2 avocados
    • sesame seeds and soy sauce to taste

    Instructions:

    Cook the sushi rice according to package directions and let it cool. Mix the rice vinegar, sugar and salt in a small bowl and pour over the cold sushi rice. 

    Sauté the tofu in an oiled pan over medium-high, then reduce to medium-low heat and cook for another 5 minutes per side. 

    Cut the cucumber and mango into very thin slices and assemble your wraps: Add a thin layer of rice, sesame seeds and a little soy sauce to your nori sheet. Top off with slices of mango, cucumber, and crispy tofu. Roll your wrap and enjoy!
